18 – Pine Nut & Cumin Catfish

Native American recipes must include a favorite fish. This recipe for catfish is delicious, and it also offers protein in your diet.

Makes 4 Servings

Cooking + Prep Time: 35 minutes

Ingredients:

4 fillets, catfish

1/4 cup of oil, vegetable

1/4 cup + 2 tbsp. of pine nuts, toasted

1/2 cup of cornmeal, yellow

1/4 cup of flour, all-purpose

1/2 tsp. of pepper, cayenne

1 tsp. of salt, kosher

1/4 tsp. of cumin, ground

Instructions:

1. Preheat the oven to 350F.

2. Spread pine nuts on cookie sheet. Place in 350F oven for five minutes, till toasted. Separate 2 tbsp. for later.

3. Grind 1/4 cup pine nuts. Add to bowl with fillets. Add cornmeal, cayenne pepper, kosher salt, cumin and flour. Coat fillets thoroughly.

4. Heat the oil in large-sized skillet on medium heat. Fry coated fillets till both sides are golden brown in color. Sprinkle on extra pine nuts and serve.
